2022 Merlot Dessert Wine

100% Merlot grapes picked at optimal ripeness, then frozen as whole clusters to -8 degrees. By freezing the grapes, the flavours were concentrated. The ferment is stopped short to keep the natural sweetness in the wine. The beautiful colour comes from allowing the juice to ferment with skin contact for several days. The residual sugars create a heavier weight on the palate, making this a beautiful sipping wine for after dinner. Bright aromas of strawberry jam, raspberries and honey are followed with flavours of passionfruit, vanilla and cinnamon.
